As we finally emerge from our long collective downtime and travel and nightlife start to ramp up, the question isn’t whether to go out, but where to go and what to do. We’re fierce advocates for going big and experiencing the best life has to offer — for making each day a masterpiece. Where to start? Well, we’ve got some thoughts about that, too. We’ve paired three of America’s most appealing venues (the word “bars” doesn’t do them justice), along with one of the most legendary Scotch whiskies, for an unforgettable experience to delight all the senses.

The whisky is The Dalmore, the legendary Highland malt which has been delighting whiskyphiles and converting the unconverted for more than 180 years. Rare and limited edition bottles of The Dalmore are among the most prized and sought-after in all of Scotch whisky.

The venues are three of America’s finest bars for sipping spirits, each one with its own philosophy and aesthetic, but all devoted to the fine art of great spirits and good times. And each one has a distinctive and delicious pour of The Dalmore, allowing you to, as it were, sip a masterpiece inside a masterpiece.

THE DALMORE 18 YEAR OLD

This is the pluperfect sherry cask-finished whisky. It’s partly the magic of the base spirit, and partly the casks that have held 30 year old Matusalem Oloroso sherry — casks that are made available exclusively to The Dalmore. After beginning the aging process in American white oak ex-bourbon casks, the whisky finishes maturing in the Matusalem Oloroso casks. On the nose, vanilla and cinnamon come from the bourbon casks, while the sherry influence comes through in aromas of dark chocolate and orange. Those notes are also evident on the palate, along with rich coffee and nutmeg. The long and rich finish brings more citrus as well as molasses.

THE DALMORE King Alexander III

King Alexander III is so named to commemorate a seminal event in Scottish history. In 1263, Alexander was saved from a charging stag by an ancestor of what would become the Clan Mackenzie. The king gave him the right to bear a stag’s head in his coat of arms, and centuries later, when the Mackenzie family owned The Dalmore, they made it the emblem of the brand, which it remains the day.

The Dalmore’s King Alexander III whisky, bottled at 40% ABV, is a complex classic, a marriage of whisky aged in six different kinds of cask: Oloroso sherry; Madeira; port; bourbon; Marsala; and Sauvignon. Before bottling, the whiskies are married together in sherry butts for a final extra touch. The result is a magnificent, singular whisky, with a nose dominated by berries and a hint of passion fruit; and a palate redolent of bright citrus zest, rich créme caramel, vanilla, and almonds. The finish is warming and gentle, with notes of cinnamon, nutmeg, and ginger.

THE DALMORE 25 YEAR OLD

A combination of exceptional casks and inspired blending makes this a truly extraordinary whisky. The 25 Year Old is aged in American ex-bourbon white oak casks; aged Tawny port pipes and casks; and casks that have formerly held 30 year old Matusalem Oloroso sherry — to which The Dalmore has exclusive access. Bottled at 42% ABV, the port and sherry influences come through most powerfully on the nose, imparting aromas of citrus and fig cake, as well as sweet toffee and unprocessed vanilla pods. The vanilla and toffee come through on the palate, accentuated by notes of rich chocolate truffles. The lingering finish is a sweet tooth’s delight, with notes of maple syrup, dark chocolate, and spiced gingerbread.

THE DALMORE 35 YEAR OLD

It’s a transformation that takes more than a third of a century, an evolution that produces a truly landmark whisky. The new make ages first in white oak ex-bourbon casks. Some of it continues maturing there, while the rest of the aging single malt is split between port Colheita (single-vintage) pipes and sherry casks which have held 30 year old Matusalem Oloroso sherry. The strains are then reunited in ex-bourbon casks for final maturation before being bottled at 40% ABV. The flavor of the finished product is as complex and magical as the road from still to bottle.

THE DALMORE 40 YEAR OLD

The pinnacle of the “100 Years of The Dalmore” flight, the 40 Year Old is a stunning testament to the art of cask aging. The whisky’s journey is long, circuitous and in the end, delicious. After starting the aging process in American white oak ex-bourbon casks, it’s moved between Graham’s port Colheita pipes (Colheita port is from a single vintage, rather than a blend of many different ages) and sherry casks that have held 30-year-old Matusalem Oloroso sherry from Gonzalez-Byass, Spain’s premier producer of sherry. The final stage of maturation comes when the disparate whiskies are brought together to harmonize once more in American ex-bourbon white oak. The finished product, bottled at 42% ABV for maximum flavor, reaches heights seldom scaled by any single malt. The port cask influence comes through on the nose, redolent of cherries, plums, caramel apple and vanilla. The sherry’s presence is more clearly felt on the palate, with orange peel, marmalade, rich chocolate and walnuts dominating. The port and sherry blend beautifully on the finish, with poached pear, caramel, dark chocolate and Black Forest fruits completing the amazing ride.
